About Me
Insatiable is written by Lenore Wait, who lives in Orlando, Florida, grew up in the South Shore area of Massachusetts, and spent a year living in England after college. She is married with no children (only fur-babies at this point: Oliver the cat and Jack the rabbit), Jewish (non-practicing) and is in her late-twenties. She works full-time in the public service field and is also currently working on her Masters degree in Criminal Justice at the University of Central Florida. She earned her undergraduate degree in Psychology from the Wilkes Honors College and spent eight years of her life (starting in high school) working off and on at Walt Disney World. While working for Disney, Lenore did everything from lifeguarding, to admin at the Grand Floridian Spa, to front desk at Fort Wilderness, to working as a safari driver at Kilimanjaro Safaris (and yes, that was the best job she has ever had).
What does any of this have to do with food, you ask? Well, nothing and everything, all at once. Having lived in Massachusetts for so much of her childhood, Lenore has a fondness for everything shellfish. Lobster rolls and clam chowder take precedence, of course, but give her a bucket of mussels, clams, or crab claws any day and you will find yourself with a happy, happy girl. Living abroad in a small farm town in the UK also gave Lenore a chance to expand her food appreciation. Living in an older apartment with the world's smallest appliances and having no job, she found herself cooking. A lot. She cooked and baked daily, learning to use the ingredients that were unique to England to replace the American ones that she missed. She also spent a great deal of time making comfort foods (especially Jewish comfort foods) from her childhood, and rediscovered her love of her culture's recipes that way. While living there, she also learned to love British food culture, especially British "take-aways," including amazing chip shops, kebab shops and Chinese food.
Her job, nor her education, have nothing to do with her love of food, and at this point very rarely involve her love of writing. So, she found that discovering Orlando's amazing local restaurant gems and cooking in her small but awesome kitchen (it has a dishwasher! and normal-sized appliances! and a mixer! - all things she missed while in the UK) were both excellent ways of winding down and de-stressing both after work and on her days off. She is rarely more comfortable than when she is baking at home or sitting around a table with friends enjoying amazing food.
So, with that love of food and her unused love of writing, it only made sense that she start a blog. It has become an additional outlet, and even more, it has become a way for her to meet people involved with and become a part of a local (and non-local!) foodie community that she barely knew existed previously.
